I’ve always made chocolate chip M&M cookies in the past but thought it time to try out making some with Reese’s Pieces for him instead. These peanut butter Reese’s Pieces cookies are a peanut butter lovers dream. And my brother’s. They’re soft, fluffy, and full of Reese’s Pieces, giving them just the perfect amount of added sweetness to make them different than classic peanut butter cookies. But they also make a great traditional peanut butter cookie recipe if you want to omit the pieces! They’re also perfect for using up any leftover candy after Halloween going right into Thanksgiving!

Butter – you’ll want to use salted butter that’s been melted and cooled. Peanut butter – make sure you’re using creamy peanut butter in these, the crunch will come from the Reese’s Pieces. Egg – I recommend using a large egg that’s at room temperature! If you can’t wait for it to get to room temperature, it’s fine, it’s just better that way. Reese’s Pieces – these are obviously designed to be Reese’s Pieces cookies but if you don’t like those, you could always just use this as as peanut butter cookie base and switch out the candies for semi-sweet chocolate chips peanut butter chips, or even nuts.

Preheat the oven to 350°F. Line large baking sheets with silicone baking mats or parchment paper. Combine flour, baking soda, and salt in a medium bowl and whisk together. Now in a large mixing bowl, cream the melted butter, peanut butter, brown sugar, and granulated sugar together until smooth. You can do this by hand, with an electric mixer, or I personally like to use my stand mixer. Add the egg and vanilla extract to the butter and sugar mixture and beat until well combined. Next you will add the combined dry ingredients (the flour mixture from earlier) to the creamed mixture in the large bowl and mix just until ingredients are combined. Once those are combined, stir in the Reese’s Pieces. Using a large cookie scoop or large spoon, scoop out a heaping tablespoon of dough and roll into a smooth ball with your hands, then place balls on the prepared cookie sheet at least 2″ apart. Gently flatten out balls slightly using the bottom of a heavy glass. Don’t press too hard or they’ll end up too thin and crunchy, not soft like you want to. Bake for 10 minutes or until the edges start to turn golden brown but the middle is still soft. Remove them from the oven and gently press additional Reese’s Pieces into the tops of the cookies while they are still hot. The bottom of the cookie will likely still be slightly soft, so let them sit on the baking sheet for about 10 minutes until they’re cool enough to move without falling apart. And finally, as the last step, carefully from the pan to a wire cooling rack and let cool completely. Serve these Reese’s cookies warm or at room temperature! And you may want to enjoy with a tall glass of milk to wash down all that yummy peanut butter flavor!
